He asked, “Are you a photographer?”
I smiled and said yes, explaining that I photograph a little of everything. Without missing a beat, he asked if I’d be interested in photographing for the restaurant. I was thrilled.

What inspired you to open a fine dining restaurant in a small town like this?

The goal of opening Harding On Main is to bring a taste of timeless classics to our small town, while also introducing elevated, globally inspired flavors to the local dining scene.

How would you describe the experience guests can expect when they walk through your doors?

We’re committed to delivering the best service possible, every single time. Our incredible team puts their heart into creating a welcoming space where guests can eat, drink, and unwind—while we take care of the rest.

What makes your menu different from other places in the area?

Our menu offers something for everyone. You can never go wrong with a classic fried chicken sandwich or a juicy burger—but we also love introducing our guests to bold, unique flavors that are new to Cañon City.

What’s the vibe you’re creating with the space and the service?

Harding On Main offers a warm, inviting atmosphere where you can relax, enjoy great food and drinks, explore or purchase local art, and let our team take care of everything for a perfect night out.

What’s your background as a chef? Have you opened any other restaurants?

I’ve worked in restaurants all over the country, including renowned kitchens like Bestia. Harding on Main is a culmination of that experience and passion.

How do you want people to feel when they leave your restaurant?

We want people to feel completely taken care of—like they just spent the evening somewhere special. Whether it’s a casual bite or a celebration, we want guests to leave full, relaxed, and already looking forward to their next visit.

What’s your favorite part of service each night?

Connecting with our customers and hearing their feedback. We wouldn’t be here without the support of our community, and that’s something we never take for granted.

Is the menu seasonal or fixed? Will it change throughout the year?

We’ll be updating our menus 3–4 times a year to reflect the seasons and the availability of fresh, local produce. Our goal is to highlight local flavors in every dish and drink.

Do you source anything locally?

Absolutely. We proudly source as much local produce and fresh flowers as possible from right here in Colorado. We also feature local artists throughout the restaurant. As a small business, we believe in supporting and collaborating with other small businesses in our community.
